Asian Spinach Salad

I've had a craving for salad lately. I'm not sure why - maybe I'm secretly trying to balance out the junk food bingeing that will inevitably come with Christmas? Anyways, I made this really good salad for lunch today and just had to share it - it's that good!

It's super healthy too - we could all use a little immune boosting help this time of year!

Ingredients
-spinach (or a nice spring mix would be tasty too)
-1 carrot, grated
-chopped roasted bell pepper
-1/2 cup edamame
-Asian dressing (I used some leftover ginger soy dressing from an Asian Wonton Salad from Corner Bakery Cafe - this is a REALLY good salad!)

Instructions
Put your greens on a plate. Add your toppings. Drizzle with dressing. Eat!
